Eat This! Chipotle Bacon Cheddar Deviled Eggs

Photo and Recipe: Butter Your Biscuit
I had quite a few left-over eggs from Easter and decided to make one of my favorites recipes, Chipotle Cheddar Bacon Deviled Eggs. I followed the recipe from the blog Butter Your Biscuit, but tweaked it to make it more to my taste.
The chipotle adds the perfect amount of smokiness, and a little spicy kick! I think you'll love these!
Prep Time 15 minutes Cook Time 20 minutes Total Time 35 minutes
INGREDIENTS
- 12 large eggs 
- 1 c. mayonnaise 
- 2 tea. smoked chipotle 
- Pinch salt and pepper 
- 5 pieces bacon, cooked and chopped 
- 1 c. cheddar cheese, shredded 
INSTRUCTIONS
- Put eggs in boiling water, remove from heat, and place a lid on the pot. Let it sit for 20 minutes. Drain the hot water and run the eggs under cold water. 
- Peel eggs and slice them lengthwise. Scoop out the yolks and place them in a small bowl. Using the back of a fork, mash the yolks until they are crumbled. 
- Add in the mayonnaise, bacon, cheese, smoked chipotle, salt, and pepper. Mix until combined. 
- Put the mixture into a Ziplock baggie, pushing all the filling into the corner. Snip the corner off, squeezing the filling into the eggs (I missed this step – obviously they are a little messy). 
- Top with bacon and parsley (I didn't have parsley so I skipped this step. I topped with smoked chipotle).
